We are a commune of inquiring, skeptical, politically centrist, capitalist, anglophile, traditionalist New England Yankee humans, humanoids, and animals with many interests beyond and above politics. Each of us has had a high-school education (or GED), but all had ADD so didn't pay attention very well, especially the dogs. Each one of us does "try my best to be just like I am," and none of us enjoys working for others, including for Maggie, from whom we receive neither a nickel nor a dime. Freedom from nags, cranks, government, do-gooders, control-freaks and idiots is all that we ask for.
This recipe is good enough, but don't mix the beans with the rice. Make lots more of the beans, and dump them on top of the rice. The beans are the food, the rice is the vehicle.
I think I lived on this in college, and I still like it. Beans from the cans, as we always recommend. If anybody wants to spend the time to soak dried beans, God bless ya. That ain't me.
Plenty of salt, and hot sauce of your choice on the side, of course. Salad on the side if you like that stuff, but I think salad causes cancer, and maybe corona too. A Conona beer, on the other had, goes well with this supper.
Rice and beans is good eatin'. Throw in a little ham or smoked sausage for flavor. But you need some cornbread. Not that sweet stuff in the box, get a bag of Martha White. Add a can of corn and some chopped jalapenos to the batter, preheat the oven with your cast iron skillet inside the oven with a good cup of lard or shortening inside the skillet, pour in the batter slowly so that lovely hot lard laps up over it, deep fry that stuff in the oven. Crispy, greasy, deep fried cornbread balances out the ill effects of eating healthy food like rice and beans. You really don't want to be too healthy, you know, healthy people are the least prepared for the ill effects of being dead when the time comes.
If you are single get a small pressure cooker. before you go to bed soak the beans. next day add 1 cup of rinsed soaked beans in the pressure cooker with a little italian dressing and onions and cook15 minutes. You are done.
Rice is not simply a carrier for beans. The beans and rice combination balance the amino acids providing complete protein. rice is an essential part of the meal. Whether you mix the combo or put the beans on top, you'll eventually mix them together anyway so it's a bit of a bozo claim.
