I learned from a 4-star chef hunting friend that, having cooked meals all of my life, I still knew nothing about the basic principles of cooking. Spending time with him in a commercial kitchen was eye-opening and, in a small way, life-changing.

What I knew was how to throw stuff together and make edible, nourishing food. It prevented starvation, but it had no art to it and I had never been taught the fundamentals. Nowadays, we lazily specialize in Thai take-out but I love learning more about the fundamentals of serious cuisine. Sometimes I wish I had gone to the CIA - the real one, not the one in Langley.

I learned to cook from my mother. I liked to help her when I was a child and grew up helping and filling in for her when she worked. I also grew up in a house with both grandmothers and three aunts living there so there was a lot of help and instruction to be had. My cooking style is just what I've learned from others and would hardly qualify as a cook or chef. But thanks to Youtube I have learned techniques and tricks that are useful. When we are camping I usually cook for everyone, dutch ovens over the coals as well as the camp stove. My mother's favorite meal was lasagna and it has always been one of my favorites too. Great for a crowd.

It's not difficult t to create a delicious meal. But it's very difficult to do it consistently for every customer and have it on the table in less than 15 minutes. I take forever to cook and make a huge mess in the process.

Have you watched Master Chef Junior? Those kids can cook. It's a good show.

I have that course and a few more. Love them. Chef Briwa is great. It whet my appetite
for more.

I loved that lecture series. I've been happily poaching salmon ever since. I never could seem to get the knack before.
