We are a commune of inquiring, skeptical, politically centrist, capitalist, anglophile, traditionalist New England Yankee humans, humanoids, and animals with many interests beyond and above politics. Each of us has had a high-school education (or GED), but all had ADD so didn't pay attention very well, especially the dogs. Watermelon is up in the garden. Had about 75 of them pups last year--ate as much as I could but gave a lot of them away. They won't be ready until about August. Mint is going wild.
Take your balls of watermelon, put them in a bag and suck it down with one of those food vacuum machines. Concentrates the flavor. You'll also need more watermelon.
Hey BD, thanks for sharing this recipe. We tried it last night with some grilled chicken, it was terrific - and no olives needed. I was a little apprehensive about feta in the watermelon, but the salty cheese really blends well with the melon and the mint enhances the sweetness of the melon. A nice surprise indeed!
