We are a commune of inquiring, skeptical, politically centrist, capitalist, anglophile, traditionalist New England Yankee humans, humanoids, and animals with many interests beyond and above politics. Each of us has had a high-school education (or GED), but all had ADD so didn't pay attention very well, especially the dogs. Each one of us does "try my best to be just like I am," and none of us enjoys working for others, including for Maggie, from whom we receive neither a nickel nor a dime. Freedom from nags, cranks, government, do-gooders, control-freaks and idiots is all that we ask for.

Mommys of America cheap 'n easy winter supper #8: Mac and Cheese

It's basically an Americanized version of Fettucine Alfredo.


People make a meal of it, with salad, but it's also a darn good side with roast beef.


A little truffle oil makes for an upscale Mac and Cheese. I had that once in a very fancy restaurant, baked in individual pottery ramekin/mugs with shaved truffle on top. Quite effete and entirely edible.

Lots of extra cheese. Bake it in the oven to finish it giving it a golden brown crust. chop some bank up, cook it to just crisp and mix it in including the bacon grease. a couple of green onions chopped up into it too. Make this thing a 1000 calorie bomb. Oh yeah, now your talking.

OMG! Isn't anyone here old enough to have experienced the old mac and cheese made using the blue round can of powdered cheese (Kraft of course)?

It just so happens that DH and I are having a cheese conversation today: what is the best chess for topping French Onion Soup? All suggestions will be greatly appreciated!
