We are a commune of inquiring, skeptical, politically centrist, capitalist, anglophile, traditionalist New England Yankee humans, humanoids, and animals with many interests beyond and above politics. Each of us has had a high-school education (or GED), but all had ADD so didn't pay attention very well, especially the dogs. Each one of us does "try my best to be just like I am," and none of us enjoys working for others, including for Maggie, from whom we receive neither a nickel nor a dime. Freedom from nags, cranks, government, do-gooders, control-freaks and idiots is all that we ask for.

Outdoor fireplace/pizza oven

The guys began work on one like the one in the photo but with fieldstone not cut stone. It will be on the edge of our bluestone patio. Have to keep up with the Joneses.  


Actually, I like any reason to be outside, day or night. On these global cooling summer evenings, a fire, a cigar, and a little whisky make for the perfect contemplative moments. And the smoke keeps the bugs away. 


I might decide to learn to make home-made pizza too. How difficult can it be?

ditto to the fire, a cigar and a little whiskey...probably see me out on the patio in a couple of hours doing just that.

Not difficult. I make a flatbread w toppings in a skillet. Call it ersatz pizza, if you like. Toppings: that which needs cooking, cook in a skillet beforehand. Cheese, for example, needs no cooking beforehand. Make flatbread in bread machine- takes several minutes. You can use a bread recipe or a specific pizza dough recipe. Let flatbread rise for an hour or so. More if you want. Roll out flatbread and drop in hot skillet. After first side is cooked several minutes, flip and add toppings. Then the cheese can melt.

Advantage- doesn't heat up the kitchen so much.
But outside on a grill or hot stone will work, also.

I spent a lot a years looking for the right dough recipe, but it wasn't until I found Jim Lahey's no knead recipes that I was happy.

1/4 t. yeast
3 3/4 c. unbleached all purpose flour
1 1/2 t. salt
1 1/2 c. water

In that order, mix the first three, then with the water. No need to knead.

Let sit covered at room temp for 16 to 20 hours.

Form into one or more balls and let rise for 2 to 4 hours, then flatten to disk(s), add toppings and bake at high heat for less than ten minutes.

I'll have to try that one. I've got a pretty good one, but it requires kneading. of course, I cheat, and let my bread machine do the work.
Homemade pizza isn't hard, & you get it made exactly as you want it made, & in the proportions you desire.

If you have a hearth oven, you'll soon learn that you can cook most anything in it. Just make certain it's big enough.

Steaks, Thanksgiving Turkey, almost whatever you want.

No knead to limit yourself to pizza.

Although pizza is always good.

Switch between coal and wood for different flavors too.
