We are a commune of inquiring, skeptical, politically centrist, capitalist, anglophile, traditionalist New England Yankee humans, humanoids, and animals with many interests beyond and above politics. Each of us has had a high-school education (or GED), but all had ADD so didn't pay attention very well, especially the dogs. Each one of us does "try my best to be just like I am," and none of us enjoys working for others, including for Maggie, from whom we receive neither a nickel nor a dime. Freedom from nags, cranks, government, do-gooders, control-freaks and idiots is all that we ask for.
The Filipino version. I always thought the word was Philippino or something but I checked.
Anyway, we had a Filipino helper for years, when the kids were younger, and, without wanting to be racist, I still believe that they are the best people in the world. Besides their work ethic, they seem to be caring and loving souls. Yes, I know they like to eat dogs but that's a stretch for me.
She liked to make Filipino suppers, and I was all in on that. This was one of my favorites, served with white rice. The tripe is not required, but the peanut butter is, along with lots of pumpkin hunks:
I have know many Filipinos and they were all nice people. One of my operations was pretty rough and I was getting regular shots of pain killer. The first nurse just pumped it right in (through the intravenous tube) and it gave me a wicked headache for a few minutes. So after that I asked the nurse each time they gave me the shot to feed it in slow and for the most part they did. Still fast enough that I got a little headache but not bad. My Filipina nurse was the only one to feed it slow enough that I had no effect from it.
Oxtails are exceptional additions to any beef stew, soup or sauce - the meat is not only delicious, but they're loaded with collagen, which gives any dish they are in an incredible unctiousness ( is that a word ? :-) ) !
Sadly, the price of oxtails has gone through the roof, at least around us .
Filipina is the female form. My Filipina daughter-in-law, who married one of my Romanian sons, is a joy. They live on the frontier in Nome and in addition to her hospital job she is a social media influencer, with a million followers in the Philippines. They hunt caribou, catch king crab in the winter, smoke hundreds of salmon every year, metal detect for gold, and swim in the Bering Strait with their three daughters. (42 degrees tops)
How did we get such fascinating people in the family?
Jollibee is the American fast food version of Filipino food, found mostly in California. It's KFC with a different sauce, basically.
