We are a commune of inquiring, skeptical, politically centrist, capitalist, anglophile, traditionalist New England Yankee humans, humanoids, and animals with many interests beyond and above politics. Each of us has had a high-school education (or GED), but all had ADD so didn't pay attention very well, especially the dogs. Each one of us does "try my best to be just like I am," and none of us enjoys working for others, including for Maggie, from whom we receive neither a nickel nor a dime. Freedom from nags, cranks, government, do-gooders, control-freaks and idiots is all that we ask for.

Shrimp Scampi

That is actually "Shrimp-Shrimp", because "Scampi" is the Italian term for cooked shrimp or prawns.


In Italy and Sicily, it's just "Scampi." Not a common item over there though.  More common are mixed seafood things with shrimp or prawns, squid, clams, fresh anchovies, cuttlefish, etc. 


Anyway, American "Shrimp Scampi" includes, garlic, butter, wine, and parsley.   Tasty, even for a shrimp-bored person like me. I'd eat dog kibbles with enough garlic and parsley.

Best scampi is done sous vide. Perfectly cooked shrimp is hard to accomplish otherwise. Love this meal! Thanks for the reminder!

I prefer it with mostly butter, and to time it so that the butter browns very slightly, but you still get the nuance of olive. No Parmesan cheese? I like a very light grating, plus a little black pepper at the end.

Another trick is to add just a smidge of Arrowroot powder near the end. It gives the sauce a very slight thickening effect without imparting any taste whatsoever, plus it lends a beautiful gloss to any sauce, which favors the tongue.

Overall though, gotta say: I prefer Coquilles St. Jacques.

My husband's very favorite dish. I make it once a month. I can't have gluten so I serve it over rice.
