I agree with the fish and carmelized sugar, so you may like this recipe. Marinate salmon with the skin on in equal parts lime juice, honey, and olive oil. Put on a medium-hot grill skin side down and cook until the meat releases from the skin easily when you slide a spatula underneath, then flip over back onto the skin, douse with remaining marinade, and cook to desired doneness.
I imagine it would be tasty with grilled pineapple. Avoid papaya this week, though.
Try sesame oil on the pineapple. I love it grilled or stir fried with beef.
Your rule on grilling steaks needs some exceptions. For the tastier, even if tougher, cuts like flank and skirt they need to be grilled over blazing hot coals. Sometimes even directly on the coals. If people like the smoke flavor on pan seared steaks, try smoking some salt and keeping it in a jar. It's perfect on all sorts of things.
